One of 2022’s most anticipated openings, this Villa Crespo-based restaurant puts a different spin on the Argentine obsession with fire and embers while giving wine equal standing as a key ingredient. The second project from dynamic young chef Julio Báez, who also runs Julia Restaurante, the staff’s wine knowledge is second to none, given that they are all qualified sommeliers (or training to be one); the team is led by Delvis Huck, who placed second in Argentina’s Best Sommelier contest 2022. The 100-long wine list runs the length of the country, taking care to showcase diversity of terroir and styles; there are 14 by-the-glass options. Standout dishes include pâté with lime ashes and koji-aged Wagyu.
