About Bruto
Bruto prides itself on its commitment to brutalism – a movement that eschews aesthetics in favour of ethics. Set in a semi-industrial urban space in Denver’s Dairy Block, this Michelin-Starred restaurant is full of curiosities and discoveries.
Much of their cuisine touches charcoal fire (which they describe as a product of brutalism). In a similar fashion, their wine list both in content and organisation is a bit of a departure from the normal; their wine selections, unsurprisingly, lean towards organic, natural, and biodynamic.
In fact, the list is organised according to the biodynamic calendar. Whites, reds, rosés and skin contact wines can be found grouped by structure, flavour profile, and origin in all of their sections: flower, leaf, root, fruit. This unconventional take certainly takes some getting used to but, under the expert stewardship of Caroline Clark and Suzanne Roberts, they manage to take guests out of their comfort zone without making them uncomfortable.
