Tucked away in the back corner of the often quiet SAHARA Las Vegas hotel, Bazaar Meats is one of the most well-regarded steakhouses on the Strip. When you enter the foyer of the restaurant, you are immediately hit with the smell of fresh lump charcoal and prime beef fat swirling in the air. The highlights of the menu are the in-house aged beef cuts sourced from all over the world, prominently displayed near the front of the dining room.
A shotgun style restaurant which is long and narrow can seat hundreds and is often a full and raucous affair. Up to three sommeliers will work the busy evenings supporting the service staff, many of whom have been on board since day one. Chef José Andrés’ style is obvious throughout the menu with a nod to Spanish classics like patatas bravas, jamon Ibérico and pork Secreto. The dining room is dark and best enjoyed for the fun atmosphere of Vegas more than a business meeting.
Be glad the restaurant has multiple sommeliers, because you can immediately see the care and attention to the wine list built over time, but guided currently by Shaun Lee. While there may be the large and well known names speckling the list, the underdogs and hidden gems are the reason to drink here. Grower Champagne is a highlight, with crisp Spanish whites an easy complement to the early dishes. Since this is a steakhouse, expect much of the list to be dedicated to red wines. A bespoke carafe program pours from the restaurant’s own specialty 27L bottles. These offers are custom blended by wineries from all over the world and a truly unique way to experience wines by the glass.
