About Bar Ibai

This iconic restaurant in the city of San Sebastián has risen from the ashes. After feeding the world’s most exquisite palates for over 40 years it closed its doors and yet, a few months ago, was reopened by the multi-Michelin-starred chef Paulo Airaudo with the support of Alicio Garro (Ibai’s former owner) and awarded with a Michelin star.

This new Ibai continues with the same cuisine of yesteryear, giving great value to its products, their proximity, and to traditional dishes, looking for the highest quality and flavour with the signature, award-winning chefs’ touches that offer modernity and a hint of the avant-garde.

They have two tasting menus. Sommelier Martin Flea previously managed the wine cellar of the three-Michelin-starred Martín Berasategui and, later, one of the best wine cellars in the world, that of the Rekondo restaurant. His extensive wine list is largely based on Champagnes, which are the most popular on the menu, as well as white wines including the most prestigious regions of Spain, France and Italy. All of the red wines are light, fluid and delicate. Burgundy receives good representation and importance is also given to the great wineries and historic vintages of Rioja.
