About Akame
Hailed as “the most challenging restaurant to book in southern Taiwan,” Akame takes its name from the Rukai language, and means “grill.” Chef Alex replaces modern stoves with a wood-fired kiln, incorporating traditional spices and wild vegetables foraged from the mountains, such as millet, maqaw, and native angelica. Using ancient techniques like smoking, grilling, drying and fermenting, he masterfully blends these elements with the refined essence of French fine dining, offering a contemporary interpretation of indigenous culinary traditions.
Reaching the restaurant requires self-driving due to its remote location. Despite its secluded setting, Akame is a must-visit destination for food and culture enthusiasts traveling to Taiwan. Chef Alex not only serves exquisite dishes but also collaborates with local winery Weightstone and its owner Vivian to create a series of Taiwan-inspired Akame wines. A tasting is a must-try experience – assuming you manage to snag a reservation (good luck with that!).
